3 Quick & Easy Meals for a Stressful Week

Personally, I love to cook…when I have time, but when it’s been a stressful day (or week), it’s one of the last things that I feel like doing. Ordering out is ok sometimes and other days my husband cooks dinner, but I also like to have a few easy options for the week.


I am going to share 3 of my favorite quick & easy recipes for when you are having a stressful week.


Ritz Chicken with Skillet Zucchini


This is one of my personal favorites to have throughout the week and it’s so easy!


What you’ll need:


-1 plain rotisserie chicken

-1 10.5 ounce can of cream of chicken

-1 cup of sour cream

-2 sleeves of ritz crackers crushed

-½ cup (1 stick) of butter melted

-3 to 5 zucchini’s sliced (depending on how many people)

-2 tablespoons of olive oil

-garlic powder

-onion powder

-salt & pepper


Directions:

  1. Preheat the oven to 350f degrees

  2. Spray a baking dish with pam (or rub with oil)

  3. shred a rotisserie chicken into small pieces & add to the dish

  4. Add the can of cream of chicken and 1 cup of sour cream into the dish and mix together until well combined

  5. In a separate bowl combine the crushed crackers and melted butter. Mix and add to the top of the casserole dish.

  6. Bake for 25 to 30 minutes until bubbling. Broil on low for 2 to 4 minutes.

  7. While the casserole is baking, cut up the zucchini and add to a pan with olive oil.

  8. Season with garlic powder, onion powder, salt & pepper (add any other seasonings that you would like).

  9. Cook until done.


Chicken Taco Salad


Ingredients:

1. 1 pound of chicken breasts cubed

2. 1 can of corn

3.1 can of black beans

4.1 packet of taco seasoning

5. Romaine lettuce

6. 2 to 3 tomatoes

7. Avocados (if desired)

8. Tortilla chips (to crush on top)

9. ¾ cup of ranch dressing

10. ¼ cup of salsa

11. Cilantro flakes

12. 1 package of Mexican style cheese


Directions:

  1. Cut up chicken and add to a skillet with olive oil. Cook until chicken is fully cooked then add taco seasoning/water.

  2. Add corn/black beans to the skillet and warm up for one to 2 minutes stirring occasionally.

  3. Cut up lettuce, tomatoes & avocados. Add to plates as a salad.

  4. Tops with chicken mixture. Add cheese and top with crushed tortilla chips.

  5. Mix together ¾ cup of ranch and ¼ cup of salsa with 1 tsp of cilantro flakes for the dressing. Add this to the top.





Slow Cooker Olive Garden Chicken Pasta


Ingredients:

  1. 1.5 pounds of boneless skinless chicken breasts

  2. 16-ounce olive garden Italian dressing

  3. ¼ cup of parmesan cheese (extra to add as desired)

  4. ¼ tsp of black pepper

  5. 8-ounce cream cheese

  6. 16 ounces of penne pasta cooked



Directions:

  1. Add the chicken into the crockpot

  2. Add olive garden dressing, ¼ cup of parmesan cheese, and pepper

  3. Place the cream cheese on top.

  4. Add lid and cook on either high for 4 hours or low for 5-6 hours.

  5. When you are almost ready to eat, cook the noodles.

  6. When finished, shred the chicken with two forks.

  7. To serve, put noodles onto a plate and add the chicken mixture on top.

  8. Add any extra parmesan to noodles as desired.
